I have just moved in with my OH and am cooking tonight *gulp* Andy does a lot of the cooking and is creative.... I'm a bit un creative to say the least. We have got some egg noodles that I was going to cook with some stir fried chicken breast and some peppers... What else should I put with it? Can I chuck in a jar of Chicken Tonight?? I just have no idea unless it's pizza, chips, jacket spud or toast!! Any other quick recipes would be most appreciated x Ideally low fat...

Hi Lisa, if you want to do a low fat type of receipe, I usually do something along the lines of:
Slice up a red onion and chuck into a wok along with good splash of olive oil, seasoning, generous splash of white or red wine and a good dash of basalmic vinegar (gives some sweetness). Cook on a gentle heat until softened. Whilst this is cooking I would slice up some peppers and drizzle with olive oil and salt them, put them under a hottish grill until cooked.
Slice up the chicken lengthways and chuck in with the onions, when this is part way cooked, add the peppers and then cook through. You can also add some mushrooms and some low fat creme fraiche, this is yummy. Serve with noodles or whatever you like.

oh yeah cool! I have been to Tesco's and bought some chicken, peppers etc.. Told the oh I'm cooking! Shock horror!! I told him to enjoy whilst it lasts cos when the novelty wears off he'll be doing it all!!

Another quick & healthy recipe is Spaghetti Bolognese JennyB style (veggie!). Ded easy, get jar of Dolmio light sauce, put in pan and add half a bag of Quorn mince, cook for about 20 mins. Add herbs/spices to taste. Meanwhile cook wholemeal spaghetti in pan of boiling water. Serve sauce and mince on spaghetti, and hey presto, yummy meal! If you're really naughty like me you can have garlic bread with it as well....
Quorn is ded low fat and hubby prefers it to real mince, even though he's not veggie. Cooked it for my friend's birthday recently too and she liked it, said the sauce tasted just like restaurant sauce (they probably do use Dolmio, lol!)

Glad to hear you've been shopping Lisa, you'll have to come back and tell us how it went. The first meal I cooked for my OH was dead easy and seemed to go down very well!
Buy a free range chicken or normal if you like, wash it thoroughly, then season and place half a lemon inside it, cut a garlic clove lengthways in half and rub the skin with the garlic. Drizzle the skin with olive oil and then cover the skin with a medium layer of dried parmesan cheese, this will form a yummy crust ontop of the chicken when cooked, then sprinkle with dried rosemary and add some inside the bird.
Chop up a red onion into segments and then split up so they segments are about three layers thick, place these round the bird and drizzle with olive oil and season. Following packet instructions on cooking times etc.
Part boil (for about 5-10 mins) peeled potatoes, drain and then put the lid on the saucepan and give it a good hard shake so the potatoes are a bit bashed up, bung them in a roasting tray give a good douse with olive oil and bung in a hot over for about an hour to an hour and a half at around 200 degrees. These make the best roasties, boyfriend will be proposing marriage when he tastes these!
You can also roast some veg too, such as peppers, red onions, sweet potatoes, garlic bulbs cut in half widthways, add some fresh rosemary twigs too if you like - yummy!

mmmmmmm that sounds sooooo good! I'm copying and pasteing these onto word so I can print!! I do cook but it's always ready made stuff like new pots, veg and kievs or something! I suppose I lack confidence... not now though! I'm on top form! Will let you know tomorrow if I poison him or not
