The problem here is that the costs involved in using a small local abattoir are so high that most farmers will not bother to try and market their own meat, it all goes through the mart and into the system.

We used to raise a few sheep. They were taken to a local abattoir a few at a time and picked up 7 days later. We knew the guys there, the lambs were 'done' within minutes of arriving and we got out what we put in. If any of the offal wasn't up to standard then we didn't get it back. As specialised states the big slaughter houses are not a good thing. I have spoken to small producers and they are not always happy with the way the animals are treated and not sure what that put in is what they get out. A lot of the rules regarding food animals are of similar use as horse passports.
