Have you registered with the Council for Voluntary Services, you still should get a structure of a Treasurer, Secretary, Chairperson, Fundraising Officer etc and put together a mission statement/constitution, Sorry you may have already done all that but if not it will help people take you seriously and that you aren't there to waste their money!! Also you will need all this to register as a charity and getting it all in place will only help.
I helped set up the Dartmoor Pony Training Centre - previously Dartmoor Pony Rescue Centre and we aren't a registered charity but try to do what we can as if we were. Sadly it does prevent us from getting grants and other help like cheap stalls at shows etc.

I'll help with what I can pm me if you have any questions. I can show you the forms we use and things we've done to fundraise etc. Getting press on your side is a huge help. I don't do the DPTC much any more due to ill health it was a full time job in itself - be careful not to take on too much without the right support as it's not easy keeping on top of home checks and all the paperwork alone! Keep numbers as low as you can until you've experienced a couple of winters and know what you can cope with, i.e. how the fields hold up, shelter etc. we're lucky now as we can cut our own hay which really helps. If you are taking on Dartmoors there is normally a influx around October/December after the sales just in time for the worst of winter! ANd don't be scared to say no, we used to feel awful turning ponies away when full but you can't help them all, you can try by trying to help in ways that don't involve taking them on a lot of the time. AGain if you want some useful contacts I can pass them on.
Probably saying all the things you know but having started something like this in 2005 with 4 wild foals I know all the highs and the lows and what to be careful of - if you run yourself down and don't have the hands on help you and the ponies will suffer. Luckily at the DPTC we have a fair few people helping now but it was just 2 of us for a few years and it was tough!!
