Sing!
Like Chrissiew said:
The minute I gave up, the little madam decided that she would go and calm as you like walked across the bridge - grrrrrr! (how does that quote thing work?!)
So, when I'm in this situation, or actually before I'm in it (handy if you know a 'bogey' is coming up) the wheels on the bus does it for me and Meg and she's a champion planter!
So by 'giving up', your breathing changes and you relax as in singing - so give it a try!

mine used to plant i rememeber 1 day he had bolted from nothing i stopped him and he just stood in the middle of the road! it tuk me over an hour to get him to move! it was wen i had only just got him and i hadnt been riding long(first eva time i had riden out on my own!) i felt dreadful had got really wound up was crying ect. and once agen the minet i had accepted my fate and decided i was stuck there forever he moved and walked like a donk the rest of the way round! did find out after that that the only way to get him to move was singing and deep breaths and bending him neck to 1 side so he has to relax him frount end! only problem we have now r fords but i think thats prolly my fault!!! (i dont like water!!!)

These horses, they know us better than we do don't they!
Forgot about the singing - have used that too Nina - mind you one memorable occasion when my sister was riding my mare as a 4 year old on the road, I can remember her spooking really badly at something and taking off a bit in a fast trot up the road over a bridge disappearing from sight and all I could hear was this little voice very determinely singing "ten green bottles"!!! It did work though as Kelly stopped a few yards on.
